Whole vs ground spices: which to buy and when to use each

Whole vs ground spices: which to buy and when to use each

Whole spices keep their aroma longer, and ground spices save time. Most good home kitchens keep both: whole spices for broths, rice and anything you grind fresh, and ground spices for quick everyday seasoning and baking.

Why whole spices last longer

A spice’s aroma lives in natural oils inside the seed, berry or bark. While the spice is whole, its outer layer protects those oils. Grinding breaks it open, so the aroma starts escaping into the air. That’s why ground spices fade faster, especially when they’re stored warm or open.

When to use whole spices

  • Broths and stocks: cloves, cardamom pods, cinnamon sticks, bay leaves and peppercorns in chicken broth for freekeh or rice.
  • Rice dishes: a few cardamom pods or cloves in the cooking water.
  • Pickling and infusions: whole spices stay clear and are easy to remove.
  • Fresh grinding: cumin and coriander seeds toasted and ground just before use taste noticeably stronger.

When ground spices are the better choice

  • Marinades and rubs: they cover the meat evenly.
  • Kibbeh, kafta and fillings: ground spices blend into the mixture.
  • Baking and desserts: cinnamon, nutmeg and mahlab in ka’ak and ma’amoul need a fine powder.
  • Everyday speed: for weeknight cooking, a well-stored ground spice is perfectly fine.

How to toast and grind at home

  1. Heat a dry pan over medium heat.
  2. Add the seeds (cumin, coriander, fennel) and stir for 1–2 minutes, until they smell fragrant and darken slightly. Don’t let them smoke.
  3. Tip onto a plate to cool.
  4. Grind in a spice or coffee grinder kept only for spices, or with a mortar and pestle.
  5. Grind only what you need for the next week or two.

Grate whole nutmeg directly over the pot with a fine grater. Crush cardamom pods lightly and use the seeds.
