How to choose spices: read the label, then pick the right pack

Good cooking starts with spices that still smell like spices. Two choices decide that: what is actually in the pack, and whether the pack size suits how often you cook with it. This guide covers both, plus how to store spices once you get home.

What to check on a spice label

  1. Ingredients: a single spice should list just that spice. For a blend, the label should list every ingredient, usually in order from most to least.
  2. Salt: some blends contain salt. If yours does, add less salt to the dish.
  3. Allergens: for example, za’atar contains sesame. Check the label if anyone at home has an allergy.
  4. Net weight: compare price per gram, not price per pack.
  5. Best-before date: choose the pack with the longest date.
  6. Producer and batch details: a clear producer name, address and batch or lot number tell you who stands behind the product.

Sachet, jar or packet: which size suits you?

Format (Daaboul Sons) Sizes Good for
Sachet 20g / 50g Spices you use now and then, trying a new blend, small households
Jar 100g / 300g Spices used at the table or daily: za’atar, sumac, herbal teas
Packet 200g / 500g Staples used in quantity: freekeh, moghrabieh, moghli, coating mixes
Nuts 200g Pine nuts, almonds and others for rice, moghli and desserts

A simple rule: if a ground spice will take you more than a few months to finish, choose the smaller pack. Fresher spice in a small pack beats a big pack that has gone flat.

Storing spices at home

  • Keep them in a closed cupboard, away from the stove, the oven and sunlight.
  • Close sachets tightly or move them into a small airtight jar once opened.
  • Use a dry spoon. Moisture causes clumping.
  • Write the opening date on the pack.
  • Keep nuts somewhere cool, or in the fridge in hot weather, because their oils can turn rancid.

Signs of a good spice

  • Smell: strong and clear as soon as you open it.
  • Colour: bright and true: deep red sumac, rich brown cinnamon, green-gold za’atar.
  • Texture: free-flowing, without hard lumps.
